Cabin Worthy Baked Oatmeal with Peaches and Walnuts


There is a cabin outside of Donnor Lake that holds a near and dear place to my heart. It's where many a New Years Eve are rung in and many Fourth of Julys are celebrated. The motto is... what happens at the cabin stays at the cabin. Well, I'm breaching the rule (with permission from the cabin queen bee of course) because Trudi's Baked Oatmeal is just too good not to share with the world. Depending what time of the year we are there, different fruit find it's way into the dish. My favorite is with peaches.

It's where we wear head lamps for night hikes as well as Christmas sweaters because at the cabin it's Christmas all year round! Literally, the decor never comes down!


There was the year of the bear visit intrusion.


And the year there was so much snow, we had to dig our way to the front door!





But no matter what... there's always Baked Oatmeal. The aroma wakes you up. I'm usually up with the "older folk" drinking coffee and taking in the sunrise. The college kids come down earlier than they wanted (cause they were up playing cards till the wee hours of the morning), but they can't help themselves. The oatmeal just smells so good. Hot peaches. Cinnamon. Delightful.

Trudi sent me the recipe a year ago so I could play with the different seasons of fruit. They are all good. But here's the summer version. 'To "Oelley," (she's the only person ever to call me this) Love Trudi.'


Cabin Worthy Baked Oatmeal


2 2/3 cups old fashioned oats

4 cups 2% milk

1/3 cup packed brown sugar

2 tbls melted butter

1 tsp cinnamon

1/4 tsp nutmeg (not pictured)

1/4 tsp salt

2 medium peaches chopped (I had small ones and tripled it... remember from my peach pie pickings?)

1/2 cup chopped walnuts


Heat oven to 350 degrees.


Guys, this is so easy. Combine all ingredients in a large bowl and stir. Ha, I told you that was easy!

We are not about complicated at the cabin. Best to save your energy for fishing, hiking, and endless games.


Pour into 2 quart casserole dish. Bake for 45 min.


It comes out hot, juicy and nutty. So cabin worthy.
